Lazy post-travel posting ;)
Got home safe & sound, much to my relief — I really prefer my own nice little futon. Wanted a really simple crockpot recipe for my first dinner at home again, so tried this. The smell was fabulous all day long — yum! I served it with a salad first, to make sure we all got enough greens, too. The recipe in its entirety is first, and then my notes on how things turned out. Enjoy!
Ham and Potato Casserole
(will probably serve about 4 to 6)
4 red potatoes, sliced
2 red onions, finely chopped
1 1/2 pounds cubed ham
1 can condensed cream of celery soup, diluted according to can directions
2 tablespoons flour
Combine all of this into a crock pot. Add salt and pepper to taste. Turn it on low and walk away for eight hours. Add a quarter of a cup of water for every additional two hours you intend to cook it.
This one is very good with cheese on top just before you serve it.
Notes to self:
- When I diluted the cream of celery with the requested can of water… we ended up with a very tasty ham and potato stew. If I want to make stew again, I may add some carrots or turnips or somesuch next time. Otherwise, just the cream of celery sans water! ;-j
- I laid in 3 slices of cheddar cheese on top for the last 20 minutes. The guys really liked that, but also asked for one more slice each on their individual bowls of stew.
- One housemate wanted mustard with his ham, so I pulled out the Creole mustard to dab onto the ham bites — very popular! That’s a keeper.
- I put in 1 yellow onion (since it was there in the fridge and I was lazy) and 5 medium red potatoes, which one housemate thought was fine; the other thought another potato would have been good.
